A chopped salad makes everyone happy. Each bite has all sorts of flavors and textures. It is so good it barely needs a dressing: good olive oil, a bit of tartness, some salt and pepper at most. Do improvise with the vegetables. Just try to cut everything the same size and use equal amounts so no one vegetable gets to yell too loud, all of them just humming in contented harmony. You can double or triple the recipe and store it, undressed, in an airtight container in the fridge for at least 4 days. It comes in very handy for lunches, light dinners, and afterschool snacks.
1 cup cooked chickpeas, roughly chopped
1 small head romaine lettuce, chopped, or 3 cups Kneaded Kale
1 cup diced celery
1 cup diced tomatoes
1 cup diced red cabbage
1 cup seeded and diced cucumber (no need to peel)
1 cup chopped carrots (unpeeled if organic)
1/1/1/1 Vinaigrette or whatever dressing makes you happy
